Recipes

CUMBERLAND SAUSAGE WITH WARM CABBAGE AND APPLE SLAW
Serves 4

2-4 Cumberland sausages, depending on the appetites of those you are feeding
olive oil
Warm Cabbage and Apple Slaw
1 red onion, finely sliced
1/2 green cabbage or 1/4 green cabbage and 1/4 red cabbage, finely sliced
2 Braeburn or Gala apples, quartered, cored and very finely sliced
sherry vinegar

1. To cook sausage, brush a heavy-based frying pan with a very little oil and heat over a medium heat. Add sausage and cook for 8-10 minutes each side or until cooked through and nicely browned. While sausage is cooking, make Warm Cabbage and Apple Slaw.
2. To make the slaw, place 1 tbsp olive oil and onion in a large frying pan and cook, stirring until onion is soft and just starting to brown.
3. Add apple slices and cook, stirring, for 1 minute longer.
4. Add cabbage, a splash of vinegar and 1 tbsp water. Cook tossing for 1-2 minutes to just cook the cabbage. Season to taste.

Serving suggestion: Remove skewers from sausages and cut into serving size pieces. Serve on a bed of Warm Cabbage and Apple Slaw accompanied by Garlic Mashed Potatoes. To make Garlic Mashed Potatoes, mash cooked potatoes with warm garlic-infused milk, butter and black pepper.
